- 1 tablespoon ghee, softened
- 1 lb chicken breasts, boneless skinless, cut into cubes
- Salt and freshly ground black pepper, to taste
- 2 cups bone broth or water
- 1 green onion, finely chopped
- 1 cup shiitake mushrooms
- 1 small chili pepper, finely sliced
- 1 tablespoon lemongrass (fresh) or lemon zest
- 2 tablespoons lime juice
- 1 cup coconut milk (canned)
Instructions
- Season the chicken breasts with salt and pepper.
- Grease your Slow Cooker with softened ghee, add chicken cubes and green onion.
- Add the bone broth or water; stir.
- Cover and cook on LOW for 5 hours.
- Open lid and add mushrooms, chili pepper, lemongrass or lemon zest, lime juice and coconut milk; stir well.
- Cover and cook on HIGH for 45 to 50 minutes. Serve hot.
