- 1 pound chicken breasts or thighs
- 3 teaspoons cumin
- 1 teaspoon chili powder
- 8 slices turkey bacon
- 2 small heads romaine lettuce
- 1 large red bell pepper, diced
- 1 medium tomato, diced
- 1 avocado, diced
- ½ medium cucumber, diced
- 1 recipe Healthy Ranch Dressing or Creamy Cilantro Dressing
Instructions
- Season the chicken with cumin and chili powder, then grill or bake until cooked through. Cut into bite-sized pieces.
- Chop the turkey bacon into small pieces and cook over medium heat until crisp.
- Chop the lettuce into bite-sized pieces. Wash and dry the lettuce.
- Divide the lettuce onto plates. Add the chicken, bell pepper, tomato, avocado, cucumber, and turkey bacon.
- Serve with the dressing on the side. Garnish with fresh salsa and cilantro, if desired.
