- Ingredients for Marinade
- 2 tablespoons avocado oil
- 1 teaspoon mustard (Dijon, English, or stone ground)
- 1 tablespoon coconut aminos
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- Salt and ground pepper, to taste
- Ingredients for Salmon Skewers
- 1 1/2 lbs salmon fillet, cut into cubes
- 16 wooden skewers (soaked)
Instructions
- Place the skewers in water and let them soak for at least 30 minutes.
- In a bowl, whisk together all marinade ingredients.
- Thread salmon pieces on skewers.
- Preheat the grill on HIGH.
- Arrange salmon skewers on grill, and brush well with marinade.
- Grill for about 8 - 10 minutes, turning twice through cooking. Brush with marinade occasionally.
- Serve hot with a side salad.
