Ingredients

- 4 eggs, beaten
- 1/2 cup almond flour
- 1 tablespoon coconut flour
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 cup golden monk fruit sweetener (or sugar free sweetener of your choice)
- 1/2 cup pure pumpkin puree
- 4 tablespoons butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 and coat muffin tin with avocado oil cooking spray
- In mixing bowl, beat eggs. Add the rest of the ingredients and mix well.
- Spoon batter into muffin tins, about 2/3 full.
- Bake for 10-12 minutes, until golden brown.
