Low Carb Pumpkin Muffins

Ingredients

  • 4 eggs, beaten
  • 1/2 cup almond flour
  • 1 tablespoon coconut flour
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup golden monk fruit sweetener (or sugar free sweetener of your choice)
  • 1/2 cup pure pumpkin puree
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 and coat muffin tin with avocado oil cooking spray
  2. In mixing bowl, beat eggs.  Add the rest of the ingredients and mix well.
  3. Spoon batter into muffin tins, about 2/3 full.
  4. Bake for 10-12 minutes, until golden brown.

*makes approximately 12 muffins
