Ingredients
Scale
For the salad:
- 4 cups chopped kale
- 2 cups shredded purple cabbage
- 1 shredded carrot
- 2 tablespoons sunflower seeds
For the dressing:
- 1 cup nutritional yeast
- 1/3 cup + 1 Tablespoon apple cider vinegar
- 1/4 cup coconut aminos
- 3 cloves garlic
- pinch of sea salt
- ground pepper, to taste
- 1/3 cup extra-virgin olive oil*
Instructions
- In large bowl, combine all ingredients for salad
- In blender, combine all ingredients for dressing except olive oil. Blend until smooth.
- With blender on low, slowly add olive oil.
- Toss salad with dressing, to taste (feel free to experiment with how much dressing you want on the salad. You may not want to use all of the dressing at once) and enjoy!
