- Ingredients for Meatballs
- 1 pound ground beef
- ½ cup crushed pork rinds
- 1 teaspoon Italian Seasoning
- ¼ teaspoon salt
- ½ teaspoon black pepper
- 1 large egg
- Ingredients for Soup
- 2 tablespoons avocado oil
- ¼ cup onion, chopped
- 4 stalks celery, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried oregano leaves
- 2 cups riced cauliflower
- 2 packed cups spinach leaves
Instructions
- Preparation for Meatballs
- In a large bowl, use your hands to mix together all the ingredients for meatballs.
- Form the mixture into ½-inch meatballs and place on a waxed paper-lined tray. Refrigerate until ready to add to the soup.
- Preparation for Soup
- In a large saucepan or stockpot over medium heat, heat the oil until shimmering. Add the onions, celery, salt, and pepper. Saute until vegetables are tender, about 7 minutes. Stir in the garlic and cook for another minute.
- Add the broth and oregano. Bring just to a boil, then reduce the heat and simmer for 10 minutes.
- Stir in the cauliflower and meatballs and continue to simmer until meatballs are cooked through and float to the top, about 5 minutes.
- Add the spinach and cook until wilted, 2 minutes more. Season to taste with additional salt and pepper.
- Serve warm.
