- 1/2 cup butter, softened
- 1 cup Golden Monkfruit Sweetener (or sugar-free sweetener of your choice)
- 2 eggs
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1 cup sugar free chocolate chips (I like Lily's brand)
Instructions
- Preheat oven to 350 degrees and line baking sheet with parchment paper.
- With electric mixer, beat together butter, eggs, and golden monk fruit sweetener. Add pumpkin puree and vanilla extract, and mix to combine.
- Add the rest of the dry ingredients (almond flour, coconut flour, baking powder, baking soda, pumpkin pie spice, xanthan gum, salt) and mix well. Then fold in the chocolate chips.
- Using a cookie scoop or spoon, scoop balls of dough onto cookie sheet and flatten (with your hand or the bottom of a glass) to about 1/4" thick.
- Bake for 10-13 minutes, until golden brown.
