Healthy Pumpkin Chocolate Chip Cookies

Ingredients

Scale
  • 1/2 cup butter, softened
  • 1 cup Golden Monkfruit Sweetener (or sugar-free sweetener of your choice)
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 1/2  cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 cup sugar free chocolate chips (I like Lily's brand)

Instructions

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.
  2. With electric mixer, beat together butter, eggs, and golden monk fruit sweetener.  Add pumpkin puree and vanilla extract, and mix to combine.
  3. Add the rest of the dry ingredients (almond flour, coconut flour, baking powder, baking soda, pumpkin pie spice, xanthan gum, salt) and mix well.  Then fold in the chocolate chips.
  4. Using a cookie scoop or spoon, scoop balls of dough onto cookie sheet and flatten (with your hand or the bottom of a glass) to about 1/4" thick.
  5. Bake for 10-13 minutes, until golden brown.
  6. Enjoy!
