- 2 cups grated/riced cauliflower (I just run mine through the food processor for a few pulses)
- 2 cups grated mozzarella cheese
- 2 eggs
- Pizza toppings of your choice
Instructions
- Pre-heat oven to 450 degrees. Cut parchment paper to match the size and shape of your pizza pan. Also place a pizza stone or pizza pan/baking sheet in the oven to preheat during this step, to give your pizza a crisper crust.
- 3. Mix together the cauliflower, mozzarella cheese, and two eggs until well-combined. It will not look like pizza dough, but it comes together as the cheese melts in the oven.
- 4. Place the cauliflower mixture in the center of the parchment paper on the pizza pan. Spread the mixture thinly but evenly out to the edges of the pan. (I simply use my hand to press it down)
- 5. Bake crust at 450 degrees for 15 minutes, until golden brown.
At this point you can add your favorite pizza toppings (not too much cheese! Remember there is cheese in the crust) and put it back in the oven for another 10-15 minutes. Or let the pizza crust cool and store in the refrigerator or freezer until ready to use. This is a fantastic low carb make-ahead/meal prep recipe.
