- 2 artichokes
- 3 tablespoons avocado oil mayonnaise (like Primal Kitchen brand)
- 1 tablespooon lemon juice
- 1 teaspoon white wine vinegar
- 1 tablespoon dry mustard
- 1/4 teaspoon garlic powder
- avocado oil
Instructions
- Clean artichokes and remove tough outer leaves. Trim stem to 1".
- Bring water in a large pot to boil and place artichokes in water. Cover and boil for 12 min.
- Remove from water and let cool. Cut in half and scoop out the fuzzy center.
- While artichokes are boiling, prepare dipping sauce. In small bowl, combine avocado oil mayonnaise, lemon juice, white wine vinegar, dry mustard, garlic powder and salt. Stir well and set aside.
- If desired, you can prep artichokes and dipping sauce to this point, then refrigerate until dinner time.
- Preheat grill to medium heat.
- Brush artichokes with avocado oil and place on grill with outer leaves down for 7-8 min and then flip and grill 7-8 min more.
- Remove artichokes from grill and serve with garlic mustard dipping sauce.
