- 1 head Romaine lettuce, chopped
- 2 small cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 1 small green pepper, cut into cubes
- 1/2 red onion, finely sliced
- 1 cup Kalamata olives, pitted (sliced or not)
- 1 artichoke heart, cut in slices (optional)
- 2 chicken breasts, cooked (boiled or roasted) and cut into strips
- Ingredients for the Dressing
- 1/4 cup avocado oil
- 1/4 cup lemon juice
- 1 teaspoon red wine vinegar
- 2 tablespoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- In a large salad bowl, arrange lettuce, cucumber, cherry tomatoes, green pepper, onion, artichoke heart (optional), and Kalamata olives. Add chicken strips.
- In a bowl, whisk together all ingredients for dressing, and pour evenly over salad and chicken.
- Toss to combine well.
- Serve immediately with lemon wedges.
