Ingredients

- 1 1/2 to 2 pounds ground beef (or ground turkey)
- 2 tbsp olive or avocado oil
- 1 small onion, diced
- stalks celery, diced
- 2-3 carrots, diced
- 1 red bell pepper, diced
- ½ pound green beans trimmed and chopped into 1” pieces
- 1 small yellow or zucchini squash, cut into bit-sized pieces
- 1 can (12 oz) diced tomatoes
- 3-4 cups beef broth
- 2 teaspoons Italian seasoning
- 3 cloves garlic, minced
- salt and pepper, to taste
Instructions
- Set your Instant Pot to sauté setting. Add avocado oil, ground beef and onions. Cook until meat is brown and onions are soft.
- Add all the other ingredients to the Instant Pot, stir well.
- Cover with lid and and set to sealing. Click the manual button and set the time for 4 minutes. Allow it to naturally release the pressure for 5 minutes and then do a quick release
- Remove lid, stir, serve and enjoy!
