Fat Burning Vegetable Beef Soup Instant Pot Recipe

Ingredients

Scale
  • 1 1/2 to 2 pounds ground beef (or ground turkey)
  • 2 tbsp olive or avocado oil
  • 1 small onion, diced
  • stalks celery, diced
  • 2-3 carrots, diced
  • 1 red bell pepper, diced
  • ½ pound green beans trimmed and chopped into 1” pieces
  • 1 small yellow or zucchini squash, cut into bit-sized pieces
  • 1 can (12 oz)  diced tomatoes
  • 3-4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 3 cloves garlic, minced
  • salt and pepper, to taste

Instructions

  1. Set your Instant Pot to sauté setting.  Add avocado oil, ground beef and onions.  Cook until meat is brown and onions are soft.
  2. Add all the other ingredients to the Instant Pot, stir well.
  3. Cover with lid and and set to sealing.  Click the manual button and set the time for 4 minutes. Allow it to naturally release the pressure for 5 minutes and then do a quick release
  4. Remove lid, stir, serve and enjoy!
