Easy Roasted Vegetables

Ingredients

  • 4-6 cups vegetables of your choice, chopped into large chunks.  The combination in the photo is one of my favorites, which includes broccoli, cauliflower, zucchini, carrots, sweet mini peppers, and grape tomatoes.
  • 4-6 tablespoons avocado oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • fresh parsley, finely chopped

Instructions

  1. Preheat oven to 400 degrees.
  2. Place chopped vegetables in bowl and drizzle with avocado oil.  Toss to coat.
  3. Spread vegetables onto baking sheet in a single layer.  Season with salt and pepper.  Add parsley and toss to combine.
  4. Bake for 15 to 20 minutes, until the broccoli is lightly browned and crispy.
