Coconut Lime Sorbet

Ingredients

Scale
  • 3 cups unsweetened coconut milk
  • 1 cup sugar free sweetener (I like to use granulated monk fruit)
  • 1/8 t sea salt
  • 1 T lime zest
  • 1/2 cup fresh lime juice

 


Instructions

  1. Set up and pre-chill ice cream maker
  2. In a medium saucepan over medium heat, add coconut milk, sugar free sweetener (like monk fruit), salt and zest.  Cook, stirring occasionally, until sweetener dissolves.
  3. Transfer to a medium bowl, add lime juice and stir.
  4. Cool over an ice bath or in the refrigerator.
  5. Transfer sorbet base to an ice cream maker and churn according to the manufacturer's instructions.
  6. Enjoy right away or transfer to a freezer-safe container to chill and firm.
