- 3 cups unsweetened coconut milk
- 1 cup sugar free sweetener (I like to use granulated monk fruit)
- 1/8 t sea salt
- 1 T lime zest
- 1/2 cup fresh lime juice
Instructions
- Set up and pre-chill ice cream maker
- In a medium saucepan over medium heat, add coconut milk, sugar free sweetener (like monk fruit), salt and zest. Cook, stirring occasionally, until sweetener dissolves.
- Transfer to a medium bowl, add lime juice and stir.
- Cool over an ice bath or in the refrigerator.
- Transfer sorbet base to an ice cream maker and churn according to the manufacturer's instructions.
- Enjoy right away or transfer to a freezer-safe container to chill and firm.
